
Olive oil – 2 tablespoons
Onion – 1 large, diced
Garlic – 3 cloves, minced
Carrots – 2 medium, sliced
Celery stalks – 2, chopped
Potatoes – 2 medium, diced
Green beans – 1 cup, trimmed and cut into pieces
Zucchini – 1 medium, chopped
Prepare ingredients – Wash, peel, and chop all vegetables into bite-sized pieces. Rinse canned beans if using.
Heat oil – In a large pot, warm 2 tablespoons of olive oil over medium heat.
Sauté aromatics – Add diced onion, garlic, carrots, and celery. Cook for 5–6 minutes until softened and fragrant.
Add potatoes & beans – Stir in diced potatoes and canned beans. Mix well with the aromatics.
Pour in broth & tomatoes – Add vegetable broth and canned diced tomatoes
